What is a Portafilter, how do I use one, and why is it important?
A portafilter, sometimes referred to as a group handle, is crucial to every espresso machine. This holds the “basket” and comprises of:
- A handle, to hold onto, and to lever into the group head on the machine.
- A head which holds the basket, can come with a spout or be ‘naked’/bottomless.
- A spout if necessary. Usually each machine will have a double spout and a single spout option.
- A ‘spring’ which is inserted inside a ridge on the head, and holds the basket in place during use.
Portafilters vary in shape and size depending on the model of your machine, but all serve the same purpose and look similar. The defining characteristics of your portafilter will be the size (standard commercial machines will be 58mm or E61), and the shape and placement of the ‘wings’. The wings determine where you position your portafilter to insert it into the group head.
There are many different types of Portafilter, but the most common is the un-pressurised type, which is what we sell as standard. These are currently available in “double spout” and “ naked” , the difference being one has a spout split in two, and the other is bottomless, or naked.
A naked portafilter really encourages precision and consistency when grinding, dosing. An un-balanced or incorrect preparation will result in a messy extraction as there is no cover or channel to control where the pour goes. A well prepared puck will produce a smooth and streamlined pour straight out of the bottom of the basket, and reduces contact with surface areas meaning more oils and therefore flavour, goes straight into your cup.
